Strawberry Sgroppino Recipe: Refreshing Italian Strawberry Cocktail

Strawberry Sgroppino — a frozen, fruity cocktail made with strawberries, simple syrup, Cointreau and lots of bubbly Prosecco. Perfect for summer, this drink is cooling, refreshing and utterly delicious.

If you enjoy a classic sgroppino (lemon sorbet, vodka and Prosecco), you’ll love this strawberry variation. It combines frozen strawberries, Cointreau and Prosecco for a light, fruity twist.

Rather than using strawberry sorbet, this recipe uses frozen strawberries blended with a small amount of simple syrup — essentially the same components as sorbet but quicker and easier to prepare at home.

If you do have strawberry sorbet on hand, use it instead and omit the simple syrup so the drink isn’t overly sweet.

Recipe tips

  • Serve immediately — this is a frozen cocktail, so it’s best made to order. You can double the recipe to serve more guests, but serve it straight away for the best texture.
  • Using strawberry sorbet — if using sorbet, add about two scoops per cocktail and skip the simple syrup to avoid excess sweetness.
  • Serving suggestions — enjoy as an after-dinner drink or dessert, as a palate cleanser between courses, or simply to cool down on a hot day with some small bites.

Nibbles to serve with your cocktail

Pair the Strawberry Sgroppino with light snacks like salted nuts, crisps or olives. For more substantial options, try these simple bites that complement the fruity cocktail:

  • Artichoke Dip (quick 5-minute recipe)
  • Whipped Ricotta Dip with Roasted Tomatoes
  • Ajvar (red pepper dip)
  • Pizza Pinwheels with Prosciutto and Gorgonzola
  • Mozzarella Bocconcini with Pesto and Sun‑blushed Tomatoes

Strawberry Sgroppino — a frozen cocktail made with strawberries, sugar syrup, Cointreau and Prosecco. Light, cooling and perfect for warm weather.

Ingredients

  • 9.5 oz (2 cups / 270 g) frozen strawberries
  • 1/3 cup (80 ml) water
  • 2 tablespoons white sugar
  • 4 tablespoons (60 ml) Cointreau
  • 1.5 cups (300 ml) Prosecco

Instructions

  • To make the simple syrup, combine the sugar and water in a saucepan and bring to a boil. Stir until the sugar dissolves, then remove from heat and let cool completely. You should end up with about 3–4 tablespoons of syrup.
  • Place the frozen strawberries, cooled simple syrup, Cointreau and Prosecco in a blender. Blitz until completely smooth.
  • Pour into chilled glasses and serve immediately.

Notes

  • Serve straight away — the texture is best when freshly blended.
  • Strawberry sorbet substitute — use about two scoops per cocktail and omit the simple syrup.
  • When to serve — as a dessert drink, palate cleanser or a cool summer treat with nibbles.
