
Yesterday my oven refused to cooperate. I prepared a silky milky cake batter and put it in, but it wouldn’t bake—within minutes the top was scorched while the inside remained uncooked. I was frustrated.
Thinking the temperature might be too high, I dropped it to the lowest setting and tried baking black-eyed-pea batter to make koki beans. Once again, the oven betrayed me and turned the mixture into a burnt mess. I was furious.
I immediately regretted not using that black-eyed-pea batter to make Accra Beans instead. Accra always delivers. So I made a video showing how to prepare this beloved Cameroonian street-food fritter at home. It’s simple, quick, and incredibly satisfying to fry up.
