Sparkling Pomegranate Spritz Recipe for Refreshing Cocktails

A fun autumn-inspired Pomegranate Spritz made with vibrant pomegranate juice, Aperol and plenty of bubbly Prosecco. It balances tart, bitter and fruity flavours and is simple to mix at home — ideal for parties or for getting into the festive spirit.

If you love an Aperol Spritz, you’ll enjoy this autumnal twist. Pomegranate juice works beautifully in cocktails: it’s tart and full of flavour without being overly sweet, and the deep red colour is gorgeous.

If you prefer a more intense bitter note, swap Aperol for Campari — my husband Nathan prefers that option.

For an extra festive touch, try making pomegranate ice cubes: add a few pomegranate arils (seeds) to each compartment of an ice tray, fill with water and freeze. They look pretty and make the cocktail feel special when serving guests.

A bright, autumnal spritz combining Aperol, pomegranate juice and Prosecco for a tart, slightly bitter and fruity cocktail that’s effortless to make.

Ingredients

  • 2 oz Aperol (60ml)
  • 3 oz 100% pomegranate juice (90ml)
  • 4 oz Prosecco (120ml)
  • Rosemary sprig, optional for garnish
  • Ice cubes

Instructions

  • Fill a tall or wine glass with ice.
  • Pour in the Aperol and pomegranate juice, then top with Prosecco.
  • Stir gently to combine and garnish with a rosemary sprig, if desired. Serve immediately.

Notes

  • Adjust to taste: For a more bitter cocktail, add extra Aperol or use Campari. Increase pomegranate juice for a fruitier profile.
  • Pomegranate ice cubes: Add a few pomegranate arils to each ice cube compartment, fill with water and freeze — they look pretty and chill the drink without diluting colour immediately.
