Watermelon and basil salad with mint, creamy goat’s cheese and balsamic glaze — a light and refreshing summer dish.

Ingredients

  • 1.7 lbs (800g) watermelon
  • 5.2 oz (150g) goat’s cheese
  • 1 large handful of basil
  • 1 large handful of mint
  • 3-4 tsp balsamic glaze
  • 1 pinch salt and pepper
  • olive oil, to drizzle

Instructions

  • Chop the watermelon into small triangular chunks and arrange them on serving plates. Break the goat’s cheese into pieces and scatter it over the watermelon.
  • Finely chop the basil and mint and sprinkle over the salad. Drizzle each portion with balsamic glaze, add a small drizzle of olive oil and finish with a pinch of salt and pepper.
