- Salt
- Eggs
- Butter (melted)
- Buttermilk

How Do I Get Buttermilk?
Store-bought buttermilk is available in most supermarkets. If you don’t have buttermilk, you can easily make a substitute at home:
Milk + acid method: Stir 1 tablespoon white vinegar or lemon juice into a 1-cup measuring cup, then add milk to reach 1 cup. Let sit 5 minutes until slightly thickened.
Yogurt substitute: Mix 3/4 cup plain yogurt with 1/4 cup water to make about 1 cup of a buttermilk-like consistency.

How To Make Banana Pancakes
1. In a large bowl, whisk together the flour, baking powder, salt and nutmeg (if using).
2. Add the buttermilk, melted butter, eggs, mashed bananas and vanilla (if using). Whisk until just combined; a few lumps are fine.
3. Let the batter rest 5 minutes.
4. Heat a griddle or skillet over medium. Add about 1 teaspoon butter and spread it to coat the cooking surface.
5. Pour batter by 1/4-cupfuls onto the griddle, leaving space between pancakes. Cook 2–3 minutes until bubbles form on top, then flip and cook another 1–2 minutes until golden. Transfer to a plate and repeat. No need to add more butter for subsequent batches.
