What to Cook for a New Mom: Simple Meal Ideas for Recovery

A few months ago I visited my pregnant Ugandan neighbour and was reminded of the familiar experiences of pregnancy. She often had excess saliva and would chew on things to stop herself from spitting. Throughout her pregnancy she kept asking about Jollof rice, and she has always said how much she enjoys my cooking. When she had her baby recently, I decided to treat her to a generous spread. Here’s what I prepared.

She had specifically requested pepper soup, so I made sure to fulfil that wish. The pepper soup featured goat meat, burnt beef feet (known locally as “foot cow”), and beef muscle. I aimed for a balance in texture and flavor — not too light, not too thick — just how I like it and how she wanted it.

I also prepared collard greens. Although I learned this dish from her, she prefers her version a bit soupy while I make it “dry” with no added liquid. I chop and blanch the greens in salted water, then stir-fry them with sautéed tomatoes and onions. I finished the greens with some fried fish — a vibrant, flavorful green dish that pairs beautifully with other items on the table.

To accompany the greens and pepper soup, I boiled semi-ripe plantains. Their gentle sweetness and firm texture make them a comforting side that complements the spicy soup and savory greens.

For snacks, I made a large tray of puff puff. With four children in the household, I wanted a snack that would last and that the kids would love. They dove into the puff puff as soon as they arrived, which made me happy — feeding people and seeing them enjoy a meal is one of the great joys of cooking for me.
My YouTube Channel
I’m pleased with how my YouTube channel is growing — I now have over 200 subscribers. That milestone feels meaningful because most of the growth has been organic; I haven’t actively pushed subscriptions. The channel has started to reach more viewers, and I should definitely promote it more. I’m grateful for the positive feedback from viewers who say my tutorials helped them cook dishes they couldn’t before. One video, Fish Rolls, has passed four thousand views and continues to gain traction. Hearing that my recipes make cooking accessible to others means more to me than money — it’s a way to share my passion and help people around the world.
Why I Started Blogging and Making Videos
I began blogging and making videos after having children. Becoming a stay-at-home mom wasn’t part of an original plan; it happened because it was needed. I believe your children should inspire you rather than limit you. My kids motivate me, and caring for them didn’t stop me from sharing my talents. From my kitchen table I can reach people in distant places — all thanks to the blog and my growing video channel. I’m deeply thankful for the support I’ve received.
Homeschooling
I also completed my first week of homeschooling. We focused on letters of the alphabet and practiced writing. We even went on a playful, pretend field trip. The girls enjoy these sessions and have said they want to be “Mommy teachers” when they grow up. For them, homeschool feels like playtime, and their enthusiasm makes the effort worthwhile.
Homeschooling can be challenging, but I’m concentrating on the benefits and how it fits our family. I plan to write a detailed post explaining why we chose to homeschool, so I’ll share more soon.
