Beef Suya is a beloved African street food staple, popular in Nigeria, Cameroon, and Ghana. It’s simple to make at home and perfect for casual dinners, barbecues, or street-food-style snacks. This recipe is easy to follow and yields tender, well-seasoned meat with that classic suya aroma.

If you prefer suya without skewers, try the Cameroonian-style soya without skewers variation. Street food preparations are wonderfully adaptable, and both versions are delicious.

This recipe is quick and satisfying: slice the beef thin, coat it in spiced suya rub, skewer with onion slices, brush with oil, and grill. I love serving suya with grilled plantains, fresh salad, or a simple carb — it’s great for relaxed weekend evenings or entertaining friends.

Beef Suya Recipe

This spicy grilled meat is a classic African street food — known as soya, suya, or kebab.

Ingredients

  • 1 pound beef – top sirloin steak 1/2 kg
  • 4 tablespoons homemade suya spice
  • 2 tablespoons oil of choice – I used canola oil
  • 1 large onion cut into big slices
  • Salt

Tools needed

  • Bamboo skewers

Instructions

  • Soak bamboo skewers in water for at least 30 minutes before using to prevent burning.
  • Cut the beef into very thin, flat slices. If your cut is thicker, you can cut into chunks instead.
  • Place the meat in a bowl and add the suya spice and salt as needed. Taste the spice first—some blends already contain salt. Mix thoroughly so every piece is well coated.
  • Thread 3–5 slices of meat onto each skewer, alternating with a slice of onion after every piece of meat.
  • Brush the skewers generously with oil to help them brown and keep the meat moist.
  • Arrange the skewers on a tray lined with aluminum foil and lightly greased with oil.
  • Grill in a 400°F (200°C) oven or under the broiler for about 20 minutes, turning halfway through so both sides char nicely. Adjust time if your slices are thicker or thinner.
  • Serve hot and enjoy.

Notes

1. You can omit the onions if you prefer plain skewers.

2. Add bell pepper chunks for extra color and flavor if you like.
