Smoothie bowls are one of my favorite breakfasts. They let you enjoy a thick, spoonable smoothie while adding texture with fresh fruit, seeds and nuts.

Sometimes a drinkable smoothie is perfect, but when I want extra crunch or a pile of chopped fruit on top, a bowl is the way to go. This Berry Banana Smoothie Bowl is bright pink, vibrant and fun to decorate with sliced strawberries and kiwi. Use whatever toppings you like — any chopped fruit, nuts or seeds work beautifully.

To make it, blend a banana (frozen gives the creamiest texture), frozen mixed berries, banana-flavored yogurt, a touch of honey and a squeeze of lemon juice until smooth. Pour into a bowl and arrange toppings — I used chopped strawberries, kiwi, chia seeds and toasted pine nuts. The toasted pine nuts add a rich, buttery crunch that lifts the whole bowl.

It’s hard not to feel cheered by this bowl: colorful, tasty and wholesome.

Ingredients

  • 1 banana (preferably frozen)
  • 60 g frozen mixed berries
  • 1/2 tsp honey
  • 125 g banana yogurt
  • 1 small squeeze lemon juice
  • 1/2 kiwi, sliced
  • 2-3 strawberries, sliced
  • 8 g pine nuts, toasted
  • 1 tsp chia seeds

Instructions

  • Place the banana, frozen berries, banana yogurt, honey and lemon juice in a food processor or blender. Blitz until completely smooth, adding a splash of water if needed to reach a spoonable consistency.
  • Transfer the smoothie into a bowl. Top with sliced strawberries, kiwi, chia seeds and toasted pine nuts. Serve immediately.

Notes

To toast pine nuts, heat them in a small dry frying pan for a couple of minutes, shaking the pan until they are golden on both sides. Watch carefully — they brown quickly.
