It’s also made without pectin, so this is a simple, sugar-free homemade jam that really works.

Ingredients Needed

Healthy Strawberry Jam

Ingredients

  • 2 pounds fresh strawberries (about 1 kg)
  • 1/2 cup raw honey
  • 1 teaspoon lemon zest from one lemon
  • 2-3 tablespoons lemon juice squeeze from the same lemon used for zest

Instructions

  • Rinse the strawberries, hull and halve or quarter them. Place the fruit in a pot, add the honey, lemon zest and lemon juice, and toss to combine.
  • Cook the pot covered over medium heat for 10 minutes. Uncover, then mash the strawberries slightly with the back of a wooden spoon or a potato masher. Continue to cook, stirring occasionally, for another 10 minutes or until the mixture thickens. If it remains too watery after 20 minutes, keep cooking and stirring until it reaches a jam-like consistency and coats the back of a spoon. Transfer to a glass jar to cool, then refrigerate.
  • Serve on pancakes, muffins, crepes, toast and more.
