Ingredients  

  • 2 large eggs
  • Pinch of salt
  • Pinch ground white/black pepper
  • 1/2 tablespoon oil
  • 1 tablespoon cheese – crumbled or grated I used Salemville Amish Blue Cheese crumbles

Instructions 

  • In a bowl, beat the eggs together with a pinch of salt and pepper.
  • Heat the oil in a skillet on high for 2–3 minutes. Lower the heat to low, pour in the eggs, and tilt the pan so the eggs evenly coat the bottom. Cook gently until the top starts to set. Sprinkle cheese over one side, fold the omelet in half, flip if desired, and cook for about 1 more minute to melt the cheese.
  • Remove from the pan and enjoy with bread, sliced tomatoes, and avocado if you like.
