Crispy Homemade Waffles Recipe for Perfect Weekend Brunch

Homemade waffles are simple to make and perfect for breakfast, brunch or even dinner. These waffles turn out fluffy with crisp edges, and once you try them you’ll want to make them again and again.

One of the joys of staying home with my girls is the chance to make a special breakfast most mornings. Some of our favorite moments are when we sit around the table, enjoy the food we just made and catch up with each other.

Homemade waffles are a regular in our rotation. There’s something irresistible about hot, fresh waffles: the crisp edges, the tender, fluffy center, and the way they soak up butter and maple syrup. They’re equally delicious topped with whipped cream, jam, fresh fruit, or any topping you prefer.

When I bite into a warm waffle and sip green tea, I always think I’m living my best life. My small waffle maker, which I’ve owned for years, makes two waffles at a time and works great, but I’m considering an upgrade to a four-waffle iron so my girls won’t have to wait as long in the mornings.

How to Make Homemade Waffles

Combine the dry ingredients. In a bowl, whisk together all-purpose flour, sugar, baking powder, salt, ground nutmeg and cinnamon until evenly mixed.

Combine the wet ingredients. In a separate bowl, whisk together whole milk, eggs, melted unsalted butter and vanilla extract until smooth.

Mix wet and dry. Add the wet ingredients to the dry and stir until just combined. Do not overmix — a few small lumps in the batter are fine and help keep the waffles light and tender.

Cook the waffles. Preheat your waffle maker and cook according to the manufacturer’s instructions. About 1/4 cup of batter makes one waffle, depending on your iron. Cook until the edges are crisp and the waffle is golden-brown.

Serve. Serve the waffles warm with butter, maple syrup, whipped cream, fresh fruit or any favorite toppings.

Tip for perfect waffles: The key is not to overmix the batter. Stir until ingredients are incorporated and stop. Overmixing develops gluten and can make waffles tough instead of tender.

  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 cups whole milk (480 ml)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup unsalted butter, melted

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, nutmeg and cinnamon.
  2. In another bowl, whisk the milk, eggs, melted butter and vanilla until combined.
  3. Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
  4. Preheat your waffle maker and cook the batter according to the manufacturer’s instructions. Use about 1/4 cup of batter per waffle, adjusting as needed for your iron.

Notes
