1. Spring!
Spring is my favorite time of year. Brown lawns are turning green, the air feels crisp, and I was even able to wear sandals and cropped jeans yesterday. After the long stretch of winter—which is my least favorite season—spring arrives as a welcome reminder that seasons change, no matter how difficult one feels. My plan is to savor every moment and enjoy this season to the fullest.
2. Oh Baby!
A friend just had a baby, and it’s sparked a serious case of baby fever. Babies are incredibly sweet and precious, and seeing one makes me want one of my own. Then reality sets in—pregnancy, sleepless nights, and endless tears—and I rethink things. For now, I’ll happily spend time visiting and doting on other people’s little ones.
3. Facebook Live
I recorded my second Facebook Live while working on a YouTube video. It was a behind-the-scenes look at how we shoot and what goes on in the kitchen. I plan to do more Facebook Live cooking sessions so you can catch me at breakfast, lunch, or dinner time. It’s a lot of fun and a great way to share the process with you.
4. Overripe Plantain Situation
Mr. N. won my heart all over again by bringing home bags of plantains. I love having them around, but they ripen quickly, and now I have a bunch of overripe plantains that need rescuing. I refuse to waste any, so I’m planning to turn them into plantain boats, plantain bread—similar to traditional banana bread—and even plantain pancakes. I’m oddly excited about this overripe plantain situation.
5. Laundry Situation
I was hoping to rest on Sunday, but that’s unlikely because I have a Mount Everest–sized pile of laundry waiting. If I don’t tackle it soon, the girls might run out of clean pants within the week. So the weekend will probably be laundry day.
6. Prayers
Prayer matters. I feel blessed to be able to talk to the Creator, bring my worries before Him, and let His guidance lead the way. I hope your prayer life is active and comforting.
Wishing you a wonderful week! ♥
