One Pot Chicken Pasta

Confession time: I hate washing dishes—especially multiple pots with stuck‑on food. That’s why one‑pot dinners make me so happy. Fewer dishes, less stress, and more time to enjoy the meal with my family.

This creamy macaroni and chicken is kid‑approved from the first bite to the last. “It has my favorite—chicken! It’s so creamy!” my oldest declared, and they all cleaned their plates. Mom win.

I picked up the ingredients at my local grocery store. You’ll need macaroni (I used rotini, but any short pasta works), boneless skinless chicken breasts (I prefer organic), a tomato, an onion, garlic, oil, cream, and basic seasonings—salt, pepper, and optional paprika for color and a mild smoky flavor.

I used coconut oil because I like the subtle flavor it brings, but any cooking oil will work fine.

Start by boiling the pasta according to package directions. I cook mine about 7 minutes so it stays al dente. Drain the pasta into a bowl to catch the starchy cooking water and reserve 1 cup for the sauce.

Macaroni and Chicken dinner recipe step 1

Cut the chicken into roughly 1‑inch pieces and season with salt, pepper and a pinch of paprika if using. Heat the oil in a pot over high heat and cook the chicken until browned on both sides—about 2 minutes per side.

Add the chopped onion, minced garlic and chopped tomato, stirring and letting each ingredient cook briefly so the flavors develop. Give each addition a minute or two to soften and release its aroma.

Macaroni and Chicken dinner recipe step 3

Pour in 1 cup of cream and the reserved pasta water, then bring the mixture to a gentle boil. Season with salt, pepper and more paprika if you like a richer color. Stir to combine so the sauce becomes silky and cohesive.

Macaroni and Chicken dinner recipe step 4

Mix in the cooked pasta, tossing to coat each piece in the creamy sauce. Let everything sizzle together for about two minutes to meld the flavors and heat the pasta through.

Stir thoroughly, then turn off the heat. You’ve just made a complete, comforting meal in around 30 minutes—time to celebrate your quick, tasty success.
