This spaghetti omelette is the kind of breakfast I dream about: nutritious, fresh, filling and incredibly tasty. I used to get it occasionally from cafeterias in Cameroon, and it was always a special treat. Making it at home lets you customize it with extra vegetables or proteins. Some people call it a spaghetti frittata because of its similarity to that dish. Enjoy this African breakfast classic.

Ingredients

  • 1 1/2 cups boiled spaghetti see Note 1
  • 4 eggs
  • 1/2 tomato, chopped
  • 1 tablespoon onion, chopped
  • 1/4 green bell pepper, chopped
  • 1 seasoning cube (Maggi) 4g cube
  • 1 1/2 tablespoons oil
  • 1/8 teaspoon ground white pepper
  • 2 sprigs parsley, finely chopped

Instructions

  1. Place the chopped tomato, onion, bell pepper, parsley, cracked eggs and white pepper in a bowl. Sprinkle the seasoning cube on top. Beat with a fork to combine, then add the boiled spaghetti and mix well.
  2. Heat the oil in a skillet on high for 2 minutes, then reduce the heat to low. Pour the spaghetti-and-egg mixture into the skillet and spread it evenly. Cook on very low heat for about 8 minutes until the egg sets, then flip and cook the other side for about 3 minutes.
  3. Serve warm.

Notes

1. I boiled an 8-ounce pack of spaghetti and measured 1 1/2 cups for this recipe. Cook spaghetti according to package directions, salt the water, and do not rinse after draining so the pasta retains flavor.

2. If you like heat, add chopped chili or a small amount of habanero to the mix, or serve with hot sauce on the side.

3. Customize the omelette with extra vegetables (different colored peppers, celery) or proteins such as sausage, ham, canned sardines, or cheese.

4. Cook on low heat so the egg sets through without burning. High heat risks browning the exterior before the center cooks.
