Happy Friday! It’s been an intense week and I’m a bit behind on video production, so there’s no new video today — I’m working on it, though. I wanted to drop in for a quick chat instead. How are you doing?
Since I stopped the “Here’s What’s Up” series, I realized I haven’t shared one of those loose, anything-goes posts in a while. I miss them — a blog feels livelier with a little randomness and personal touch.
Here’s what I’ve been up to: last weekend I made homemade croissants. They turned out glorious, and I was really proud. When I first learned about croissant-making and watched the long, multi-step process, I swore I’d never attempt them. The tutorial I watched was this video by one of my favorite people, Laura Vitale (recipe here).
Three days of working with the same dough — rolling, folding, chilling — sounded overwhelming. The dough spends most of that time in the fridge, but it still felt like a lot. I remember thinking, “Nope!” and picturing the dramatic gestures actors use in Nollywood.

But the foodie in me prevailed. That little voice that makes me want to cook constantly won out, and I went from “I can’t” to “I must.” Once I realized I could make croissants, I felt like no recipe would intimidate me anymore.
On a related note, I’m catering an event this weekend, which means I’ll be making lots of Accra banana fritters and drop doughnuts. Inevitably there will be plenty of tasting involved, so please pray for me — I might gain a little weight from all the sampling. Ha!
Also, I bought five coconuts from the grocery store two days ago and I’ve been delighted ever since. I love holding them, shaking them, and listening to the water slosh inside — it somehow lifts my spirits. I’m dreaming of homemade coconut milk and coconut flour, and I may share those recipes if they turn out well.
