Plantain Pancake Recipe
These plantain pancakes are delicious on their own, but add butter and a drizzle of real maple syrup for an extra treat. You can also top them with a simple fruit sauce—strawberry sauce works especially well.
To make a quick strawberry sauce, combine 12 ounces of frozen strawberries with 1/4 cup sugar in a saucepan. Heat over medium until it simmers and the berries soften but still hold some shape. Spoon over pancakes or crepes for a bright, fruity finish.

My kids enjoy this strawberry sauce on plantain pancakes and banana pancakes alike. The same batter also makes excellent waffles—just pour into your waffle iron and cook according to the manufacturer’s instructions. With my waffle maker, a quarter cup of batter makes one waffle.

Ingredients
- 3 plantains, yellow with black spots and soft to the touch
- 2 cups all-purpose flour (250 grams)
- 1/4 cup dry milk powder
- 1 teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon powder
- 4 large eggs, room temperature
- 2 cups water (500 ml)
- Unsalted butter or oil for cooking the pancakes

Blend the plantains into a puree. Peel and cut the plantains into 1-inch pieces. Place them in a blender and puree. If your blender struggles, add some of the water called for in the recipe to help blend.

Mix the dry ingredients. In a medium bowl whisk together flour, salt, dry milk powder, baking powder, baking soda, and cinnamon.

Combine the wet ingredients. Put the plantain puree into a large bowl. Add the water (or remaining water from blending) and the eggs, then whisk to combine.

Combine wet and dry ingredients. Add the flour mixture to the plantain mixture and stir until no streaks of flour remain. Mix just until combined.

Cook the pancakes. Heat a griddle or frying pan over medium and grease with butter or oil. Pour 1/4 cup portions of batter onto the pan, leaving space between pancakes. Cook until bubbles form on top, about 2 minutes, then flip and cook another 2 minutes. Repeat with remaining batter.
