For an even better result, chill the salad for about an hour before serving so the flavors meld.

Ingredients  

  • 1 cucumber (about 10 inches long)
  • 1 avocado

Mayonnaise Dressing

  • 1/4 cup mayonnaise
  • 1 tablespoon lime juice – freshly squeezed from half a large lime or one small lime
  • 1 teaspoon honey sub with sugar

Instructions 

  • Peel the cucumber if desired and cut into about 1-inch slices. Peel and cut the avocado into similar-sized pieces.
  • Combine the chopped cucumber and avocado in a bowl. Whisk the mayonnaise, lime juice and honey together, then drizzle the dressing over the salad. Toss gently to coat.
  • For best flavor, chill the salad for about 1 hour before serving.

Notes

1. Keep the salad simple or add about 1 tablespoon of finely chopped red onion if you like. You can also add leafy greens such as lettuce, spinach or kale to bulk it up.

2. Adjust the dressing to taste. Add more honey or sugar for sweetness, or more lime juice for extra tang.
