“I feel like I’m having a party,” my six-year-old said as she spooned into this seven-layer fruit salad. Every bite is a celebration: sweet mango, toasted coconut flakes, plump berries, bright kiwi and the crunchy star of the dish—Post Shredded Wheat Frosted Mixed Berry cereal. All of it is finished with creamy Greek yogurt for a fresh, satisfying combination.

I first discovered the idea of a seven-layer salad at a Sierra Leonean party earlier in the summer. My niece served a layered salad and told me it was a “7 layer salad.” The image of a clear bowl stacked with colorful layers stuck in my head, and I couldn’t wait to try my own version.
I rarely hear about a new food idea without testing it, so this seven-layer fruit salad was inevitable. Expect to see more seven-layer variations from me—vegetable salads, macaroni salads, even a seven-layer cake might be next. For now, this fruit-forward version is perfect for warm weather and gatherings.

The crunchy cereal I used is Post Shredded Wheat Mixed Berry, which I picked up in the cereal aisle at Walmart. Its bright mixed-berry frosting brings sweet berry notes and an enjoyable crunch that balances the tender fruit and creamy yogurt.


Post’s new cereal varieties are inspiring—imagine Cinnamon Roll or S’mores flavors. The Mixed Berry Frosted Shredded Wheat adds carbohydrates and texture so this salad can serve as a full meal. We happily ate it for dinner with zero guilt; it’s bursting with mixed-berry flavor and plenty of fruit goodness.

To build this salad you’ll need five fruits of your choice, toasted coconut flakes, plain Greek yogurt and Post Shredded Wheat Mixed Berry Frosted cereal. The full printable recipe with quantities appears below.

Assembly is easy. Arrange the ingredients in a clear bowl for the best visual effect. I started with chopped strawberries as the first layer.

Continue adding fruits in the order you prefer—berries, kiwi, mango and so on—until you reach the middle. At that point, add the Greek yogurt and spread it evenly to create a creamy layer that separates the fruit layers.



I finished my salad with mango and toasted coconut on top—the mango-coconut combination is a tropical classic for a reason.

Serve immediately and dig in. If you want to make it extra indulgent, add a dollop of whipped cream on top—my kids loved that version.

7 Layer Fruit Salad
Ingredients
- 2 cups Post Shredded Wheat Mixed Berry cereal heaped
- 2 cups chopped strawberries
- 2 cups blueberries
- 2 cups chopped kiwi
- 2 cups chopped mango
- 2 cups sweetened coconut flakes toasted
- 2 cups Greek yogurt plain
Instructions

Arrange all ingredients in a preferably transparent bowl. Start with three fruit layers, add and spread the Greek yogurt so it forms an even layer, then finish with the remaining three fruit layers.

Notes
- You can use any seven fruits you like—pineapple, banana or grapes are good additions. If using banana, toss slices in lemon or lime juice to prevent browning.
- To toast coconut flakes, spread sweetened coconut on a skillet over medium heat and stir until lightly browned, about 5–10 minutes.
