Pandoro (meaning “golden bread”) is a soft, light, vanilla-scented Italian Christmas cake similar to panettone. Its distinctive star-shaped form makes it perfect for turning into a Christmas tree cake.

You can bake pandoro yourself using a special tin, but I often buy a ready-made pandoro and transform it into a festive show-stopper in minutes.

Ingredients – what you need

Aside from a large pandoro, gather a few simple ingredients:

  • Mascarpone – use full-fat mascarpone for the best texture.
  • Powdered (icing) sugar – I use a small amount because pandoro is already sweet; adjust to taste.
  • Liqueur – vin santo is traditional, but marsala or another sweet liqueur works well.
  • White chocolate – good-quality, finely chopped (or use chips to save time).
  • Pistachios – use unsalted pistachios for the green, festive colour.
  • Red currants – fresh red currants add a bright contrast; pomegranate seeds are a good substitute.

How to make Pandoro Christmas Tree Cake – step by step

1. Put the mascarpone in a bowl and add the liqueur and powdered sugar.

2. Beat the mixture with an electric mixer until smooth.

3. Fold in the chopped white chocolate and pistachios.

4. Using a serrated bread knife, cut the pandoro into four cuts to create five stacked sections.

5. Spread each layer evenly with the mascarpone mixture and scatter a few red currants (or pomegranate seeds) on each layer. When stacking, offset each section slightly so the points don’t line up, creating the appearance of a Christmas tree.

6. Finish by decorating the outside with more pistachios and red currants, then dust lightly with powdered sugar and serve.

Making it in advance

This cake is quick to assemble, so I usually make it the same day. If you prefer to prepare ahead, make the mascarpone filling and slice the pandoro in advance. Keep the slices wrapped until you’re ready to assemble, then fill and finish the cake just before serving.

Ingredients

  • 2 cups (500g) Mascarpone
  • 1 fl oz (30ml) Vin Santo or liqueur of choice
  • 1/2 cup (70g) powdered sugar plus 1 tbsp for dusting
