I picked up beautiful cherry tomatoes at the market and immediately imagined them in a salad. Cherry tomatoes are both attractive and flavorful, and they shine when paired with crisp cucumber and a zesty dressing.

Because I’m not always fond of raw tomatoes on their own, I make sure the dressing is bold and herb-forward. Fresh basil in the dressing adds aromatic depth and elevates the whole dish.

This Cucumber Tomato Onion Salad was a hit at home—so much so that my husband called to rave about it while at work. Even if you’re hesitant about raw tomatoes, the dressing makes this salad worth trying.

Ingredients for Cucumber Tomato Onion Salad

You’ll need fresh cherry tomatoes (or another small tomato variety), baby cucumbers or regular cucumbers sliced thin, and thinly sliced red onion. The dressing calls for minced fresh basil, freshly squeezed lemon juice, good quality extra virgin olive oil, plus salt and freshly ground black pepper.

Basil Lemon Dressing

The basil lemon dressing is a simple vinaigrette that adds bright, herbaceous flavor. Combine minced fresh basil, lemon juice, extra virgin olive oil, salt and pepper, then whisk until emulsified. The result is a light yet flavorful dressing that complements tomatoes and cucumbers beautifully.

How To Make Cucumber Tomato and Onion Salad

1. Place halved cherry tomatoes, thinly sliced cucumbers and sliced red onion in a serving bowl or on a platter.

2. Drizzle the basil lemon dressing over the vegetables.

3. Toss everything gently to combine and coat the vegetables evenly.

4. Serve immediately, or cover and refrigerate for about 30 minutes to let the flavors meld before serving.

This salad pairs wonderfully with grilled chicken, beef, or fish and also works as an easy appetizer or make-ahead side. For a complete meal, serve it next to a pasta or a simple pan-seared fish.

  • 2 cups cherry tomatoes, halved
  • 2 baby cucumbers, thinly sliced
  • 1 tablespoon red onion, thinly sliced

Basil Lemon Dressing

  • 1 tablespoon minced fresh basil

Notes
