The great African oven-grilled tilapia—moist, spicy, and full of bold flavor. This simple oven method recreates the smoky, roadside-grilled fish experience I grew up with in Cameroon, but right in your oven.

Below I explain how to get seasoning down to the bone and keep the fish tender and juicy. I also include an easy green sauce to serve with the fish.

In Cameroon you’ll often see women grilling whole fish over coals on the roadside—brushing them with spice blends while the smoke infuses the fish with aroma and color. This oven-grilled tilapia captures that same spirit: bright, spicy, and satisfying.

You can buy whole tilapia at many Asian or African markets. If you prefer, white fish fillets or tilapia fillets will also work.

Oven grilling can dry fish out if you’re not careful. To prevent dryness, I start the fish covered with foil so it steams and absorbs the marinade, then remove the foil and broil briefly to develop color and a little crispness. The result is moist, flavorful fish with a nice finish.

  • Use fresh herbs and aromatics for the best flavor. If short on time, dried herbs and spice blends mixed with olive oil still work well.
  • If your oven is gas, rotate the tray while broiling to avoid uneven browning.
  • Marinate the fish and refrigerate it in an airtight container for at least 30 minutes; overnight gives deeper flavor.
  • Squeeze fresh lemon over the fish just before serving for brightness.

  • To confirm doneness, use an instant-read thermometer in the thickest part—145°F (63°C) is the safe target.
  • No whole fish available? Use fillets and bake them in a shallow dish following the same covered-then-broil method.

Oven Grilled Tilapia

Whole tilapia seasoned the African way and oven-grilled using a covered-then-broil technique to keep the fish moist. Serve with grilled plantains for a complete meal.

Ingredients

  • 2 whole tilapia fish – cleaned with entrails and scales removed
  • 8 cloves garlic – peeled
  • 1 inch ginger root – peeled
  • 4 stems basil
  • 2 stems celery
  • 4 stems parsley
  • 1 ½ teaspoons bouillon powder
  • ½ teaspoon salt
  • ½ teaspoon ground white pepper
  • 2 medium onions (1 for spice blend and 1 for garnish)
  • 1 habanero pepper (optional)
  • ½ cup oil (I used peanut oil)

Instructions

  • Combine the celery, parsley, basil, garlic, ginger and one onion (roughly chopped) in a blender with 1/4 cup water. Blend into a smooth green paste—this is the green spice mixture. Set aside.
  • Trim the fins with kitchen shears and remove the gills. Rinse the fish thoroughly and pat dry. Make four diagonal cuts on each side of the fish.
  • Sprinkle 1/4 teaspoon salt and 1/4 teaspoon white pepper over the fish and rub in. Mix 4 tablespoons of the green spice mixture with 2 tablespoons oil and 1 teaspoon bouillon powder. Rub this mixture all over the fish, working some into the diagonal cuts.
  • Brush a baking tray with oil and place the fish on it. Cover tightly with aluminum foil and let marinate for at least 30 minutes or refrigerate overnight for deeper flavor.
  • Preheat the oven to 400°F (200°C). Place the covered fish in the oven and bake for 20 minutes.
  • Remove the foil, brush the fish with a little oil, switch the oven to broil, and broil briefly to develop color. Watch closely to avoid burning.
  • Remove from the oven and let the fish rest a few minutes. Serve with the green sauce and your favorite sides.

Green Sauce for Fish

  • In a saucepan, combine the remaining green spice mixture with the remaining oil and bouillon powder. Add 1/4 teaspoon white pepper and 1/4 teaspoon salt. Stir and cook over medium heat for about 5 minutes, then remove from heat. Do not overcook or the sauce will darken.

Notes

  1. Cook the green sauce only about 5 minutes so it retains its bright color and fresh flavor.
  2. This grilled tilapia has a noticeable heat from the pepper. Omit the habanero if you prefer a milder dish.
