Cinnamon Sugar Pretzel Bites
Ingredients
- 3 cups flour (375 g), plus more for kneading
- 2 1/4 teaspoons active dry yeast
- 1 tablespoon granulated sugar
- 1 tablespoon brown sugar
- 1 1/4 cups warm water
- 1 tablespoon vegetable oil
- 1 teaspoon salt
For the baking soda bath
- 1/4 cup baking soda
- 3 cups hot water
For coating
- 1/4 cup butter, melted
- 1/4 cup granulated sugar (adjust to taste)
- 1 teaspoon ground cinnamon
Instructions
- In a bowl, combine warm water, yeast and granulated sugar. Let rest 5 minutes until foamy.
- Add brown sugar, vegetable oil and salt. Stir in half the flour, then the rest to form a shaggy dough. Turn onto a floured board and knead until smooth, adding flour as needed; dough should be slightly tacky. Place in an oiled bowl, cover, and let rise in a warm spot 1–2 hours until nearly doubled.
- Preheat oven to 400°F (200°C). Punch down dough and divide into 6 pieces. Roll each into an approximately 28-inch rope, cut in half, then slice each piece into 4–6 bite-sized pieces.
- Bring hot water and baking soda to a boil. Using a slotted spoon, dip pretzel pieces briefly in the soda bath, then place on parchment-lined baking sheets. Repeat until all pieces are prepared.
- Bake 8–10 minutes until golden. Immediately brush with melted butter, then toss in a bowl with the cinnamon-sugar mixture to coat.
- Serve warm and enjoy.
