Ingredients

  • 10 pounds goat meat, beef feet, and oxtails
  • 2 teaspoons salt
  • 4 teaspoons chicken bouillon powder
  • 1 medium onion
  • 1 head garlic (about 10 cloves)
  • 4 inches ginger root
  • 5 sprigs fresh basil (Thai basil recommended)
  • 4 sprigs parsley
  • 1 celery stalk
  • 1/2 cup njangsa (optional)
  • 2 habanero or scotch bonnet peppers
  • 1 teaspoon ground white pepper

Instructions

  • Rinse the meats and place them in a large pot. Add enough water to cover the meats.
  • Bring to a boil over high heat with the lid tilted to prevent boiling over. Boil 10 minutes and skim off any scum from the surface.
  • While the meat boils, combine onion (chopped), garlic, ginger, basil, parsley, celery, and njangsa in a blender. Add enough water to blend into a smooth paste. For a spicy soup, blend in one habanero pepper.
  • Stir the blended seasoning into the pot, then add salt, chicken bouillon powder, and the whole habanero peppers. Simmer until the meats are tender, about 1 hour, removing the whole habaneros after 30 minutes to avoid bursting.
  • Taste and adjust salt. Add the ground white pepper, simmer 1–2 minutes to marry the flavors.
  • Garnish with chopped basil or parsley if desired and serve hot with boiled plantains, yam, or rice.
