  • 2 medium carrots, washed and shredded
  • 2 hard-boiled eggs
  • 1/4 small red onion, thinly sliced

Lettuce Salad Dressing

  • 1/4 cup lemon juice, freshly squeezed
  • 1/2 cup extra virgin olive oil
  • 1/4 teaspoon black pepper, freshly cracked
  • 1/2 teaspoon salt

Instructions
