Dark chocolate avocado truffles for an intense chocolate hit with less guilt.

Ingredients

  • 200 g dark chocolate, at least 75% cocoa solids
  • 1 1/2 tbsp good quality runny honey
  • 1/2 tsp vanilla extract
  • 1/2 large avocado or 1 small avocado, very ripe
  • Pinch of salt
  • 1–2 small handfuls desiccated coconut (or chopped hazelnuts / cocoa powder)

Instructions

  • Melt the dark chocolate in a heatproof bowl over simmering water. Make sure the bowl does not touch the water. Stir in the runny honey, vanilla extract and a pinch of salt. Remove from heat and let the chocolate cool slightly.
  • Scoop the avocado flesh into a food processor. Add the cooled chocolate mixture and blitz until completely smooth and thick. Chill the mixture in the fridge for 15–20 minutes to firm up slightly.
  • When chilled, use a teaspoon to portion out small balls and roll them between your hands to shape. Place the truffles on a tray lined with baking parchment. Roll each truffle in desiccated coconut, chopped nuts, or cocoa powder as desired. Serve at room temperature and store leftovers in the fridge.
