This recipe highlights Beef Pilau, but you can easily make it with chicken or omit the meat for a vegan version. The deep, layered spices carry the dish, so you won’t miss the meat if you skip it.

Pilau is a fragrant one‑pot rice meal made by cooking rice in a spiced broth. The layers of flavor come from sautéed onions, warmed spices, and a short simmer that lets the rice absorb all the savory juices. It’s a festive and comforting dish that’s easy to scale for a crowd.

Ingredients

  • 2 cups long grain rice 370g
  • 1/2 pound beef, chopped into 1‑inch pieces 1/4 kg
  • 2 large onions, chopped
  • 3 garlic cloves, peeled and crushed
  • 1/2 inch ginger root, peeled and crushed
  • 1 teaspoon turmeric powder
  • 1/4 teaspoon cinnamon powder
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon cardamom powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 bay leaf
  • 4 tbsp butter

Instructions

  • Heat the butter in a pot over high heat until melted, then add the chopped onions. Cook, stirring occasionally, until the onions are lightly browned—about 10 minutes. Watch closely so they don’t burn.
  • Add the crushed garlic and ginger to the onions and cook, stirring, for about 1 minute to release their aroma.
  • Stir in the powdered spices (turmeric, cinnamon, coriander, cardamom, cumin) for about 1 minute. Add the beef, stir, and let it brown and cook through. The beef will release juices—if the pot becomes dry before the beef is cooked, add 1/2 cup water and continue cooking until nearly done.
  • Pour in 3 cups of water. Rinse the rice until the water runs clear (about 3–4 rinses), then add the rice to the pot. Add salt, black pepper, and the bay leaf, and bring the mixture to a boil.
  • When the pot reaches a boil, reduce the heat to low and let the rice simmer until it absorbs the water, about 15 minutes. Turn off the heat.
  • Let the rice rest for 4 minutes, then fluff gently with a fork and serve warm.

Notes

1. Optional spices: add anise and cloves for extra depth. Crush them in a mortar and use about 1/2 teaspoon of each.

2. Water amounts vary by rice type. I used regular long‑grain rice and found 3 cups of water for 2 cups of rice works well. If you use a different rice, follow the package instructions and adjust the liquid. Keep the heat low so the rice cooks gently and absorbs flavors evenly.

3. Long‑grain rice yields the best texture for this recipe.
