Beef and rice make a delicious pairing in this easy, one-pot dish. Unlike layered or oven-baked recipes, this method lets you brown the beef, toast raw rice, and steam everything in the same pot for less cleanup.

The result is savory, garlicky rice with tender, flavorful beef and colorful vegetables. It’s great for weeknight dinners or for serving guests.

Ingredients for Beef Fried Rice

These are the core ingredients you’ll need:

  1. Beef: Chuck roast is ideal because its fat adds flavor when browned.
  2. Rice: Raw basmati rice holds up well to frying and steaming; use raw, not precooked rice.
  3. Ginger and garlic: Blended into a paste, they give the dish vibrant, aromatic flavor.
  4. White pepper: For seasoning the beef; black pepper can be used instead.
  5. Oil: For browning the beef and frying the rice—vegetable or corn oil works fine.

How To Make Beef Fried Rice

Prepare the aromatics: Blend garlic and ginger into a paste. Use a small amount of the paste to season the beef along with white pepper and salt.

Brown the beef: Heat a tablespoon of oil in a pot over high heat, brown the beef in batches until well seared on both sides, then remove and set aside.

Sauté onion and toast rice: Add remaining oil to the same pot, sauté chopped onion briefly, then add washed, drained rice and fry, stirring continuously for about 5 minutes until the rice shrinks slightly and takes on a nutty aroma.

Season and combine: Stir in curry powder and the remaining garlic-ginger paste. Add water, seasoning cubes, salt, and the browned beef, mixing to combine.

Steam: Cover the pot tightly—optionally seal the lid with foil—and cook on low until the rice absorbs the water and is tender. After the first cooking period, add diced carrots and green beans on top, cover, and let rest off the heat for about 5 minutes to finish steaming.

Fluff and serve: Gently fluff the rice to distribute the beef and vegetables, then serve warm. Toasting the raw rice at the start gives a toasty, nutty flavor that makes this dish stand out.

Ingredients  

  • 5 cloves garlic (peeled)
  • 1 inch ginger root (peeled)
  • 1 pound beef (about half kg) cut into 1-inch slices
  • 1/4 teaspoon white pepper
  • 1 teaspoon salt
  • 1 tablespoon corn or vegetable oil for browning beef
  • 1/4 cup corn or vegetable oil
  • 1 cup chopped onion
  • 2 cups raw basmati rice
  • 1 teaspoon curry powder
  • 4 cups water (1 liter)
  • 2 seasoning cubes also called Maggi; substitute with two beef bouillon cubes
  • 1 large carrot diced
  • 10 green beans diced

Instructions 

  • Blend the garlic and ginger into a paste, adding a little water if needed, or crush in a mortar.
  • Use 1 teaspoon of the paste to season the beef, then sprinkle with white pepper and 1/4 teaspoon salt. Mix to coat the beef evenly.
  • Heat 1 tablespoon oil in a pot over high heat. Brown half the beef in a single layer for about 5 minutes per side, then remove. Brown the remaining beef in the same way.
  • Add the remaining oil to the pot and heat for about 2 minutes. Add the onions and sauté for 2 minutes, stirring.
  • Wash the rice and drain thoroughly using a fine-mesh sieve.
  • Add the rice to the pot and stir continuously for about 5 minutes so it toasts and doesn’t burn.
  • Stir in 1 teaspoon curry powder and the remaining garlic-ginger paste; cook for about a minute to release the aromas.
  • Add 4 cups water, salt, and the seasoning cubes. Stir, then add the browned beef back into the pot.
  • Seal the pot tightly—you can place the lid over a sheet of foil and fold it to create a good seal—then press the lid down to close.
  • Lower the heat to low and cook for 15 minutes.
  • After 15 minutes, open the pot and scatter the diced carrots and green beans evenly over the rice. Close the pot, turn off the heat, and let it rest for 5 minutes.
  • Fluff the rice to combine with the vegetables and serve warm.

Notes

Basmati rice works well here, but you can use another long-grain rice. If you choose a rice that softens easily, reduce the water slightly and follow the rice manufacturer’s recommended water ratio for best results.
