If you love an Aperol Spritz, you’ll enjoy this autumnal twist. Pomegranate juice works beautifully in cocktails: it’s tart and full of flavour without being overly sweet, and the deep red colour is gorgeous.
If you prefer a more intense bitter note, swap Aperol for Campari — my husband Nathan prefers that option.
For an extra festive touch, try making pomegranate ice cubes: add a few pomegranate arils (seeds) to each compartment of an ice tray, fill with water and freeze. They look pretty and make the cocktail feel special when serving guests.

Ingredients
- 2 oz Aperol (60ml)
- 3 oz 100% pomegranate juice (90ml)
- 4 oz Prosecco (120ml)
- Rosemary sprig, optional for garnish
- Ice cubes
Instructions
- Fill a tall or wine glass with ice.
- Pour in the Aperol and pomegranate juice, then top with Prosecco.
- Stir gently to combine and garnish with a rosemary sprig, if desired. Serve immediately.
Notes
- Adjust to taste: For a more bitter cocktail, add extra Aperol or use Campari. Increase pomegranate juice for a fruitier profile.
- Pomegranate ice cubes: Add a few pomegranate arils to each ice cube compartment, fill with water and freeze — they look pretty and chill the drink without diluting colour immediately.
