Rather than using strawberry sorbet, this recipe uses frozen strawberries blended with a small amount of simple syrup — essentially the same components as sorbet but quicker and easier to prepare at home.
If you do have strawberry sorbet on hand, use it instead and omit the simple syrup so the drink isn’t overly sweet.

Strawberry Sgroppino (Frozen Strawberry Cocktail)

Ingredients
- 9.5 oz (2 cups / 270 g) frozen strawberries
- 1/3 cup (80 ml) water
- 2 tablespoons white sugar
- 4 tablespoons (60 ml) Cointreau
- 1.5 cups (300 ml) Prosecco
Instructions
- To make the simple syrup, combine the sugar and water in a saucepan and bring to a boil. Stir until the sugar dissolves, then remove from heat and let cool completely. You should end up with about 3–4 tablespoons of syrup.
- Place the frozen strawberries, cooled simple syrup, Cointreau and Prosecco in a blender. Blitz until completely smooth.
- Pour into chilled glasses and serve immediately.

- Serve straight away — the texture is best when freshly blended.
