I recently posted videos of my homemade quiche to Instagram and Facebook stories and received lots of messages asking for the recipe. I set aside other projects to write this up because it’s the perfect time of year to enjoy a warm, savory quiche.

This easy quiche keeps vegetables minimal so it’s kid-friendly while still offering melty cheese and flavorful chicken sausage. The crust browns to a delicious golden crisp that complements the creamy egg filling—truly comfort food.

My family loved it so much that my older daughter declared I hadn’t made enough, and Mr. N—the self-appointed Chief of the Tasting Committee—suggested I make four next time. It’s that good.

What is Quiche?

Quiche is essentially an egg pie: a flaky, buttery crust filled with a savory egg custard and various mix-ins. The classic Quiche Lorraine features bacon and cheese, but quiche comes in many variations worldwide.

Popular versions include mushroom quiche, spinach quiche, crustless quiche, and cheese quiche. It’s a versatile dish you can adapt to include your favorite fillings.

What Goes in Quiche?

A basic quiche is made from these main components:

1. Pie dough. Flour, cold butter, a bit of baking powder, salt, and buttermilk or milk form a flaky homemade crust. Store-bought pie dough is a convenient alternative.

2. Eggs. Large eggs at room temperature are the heart of the custard.

3. Whole milk or heavy cream. Milk or cream blended with eggs creates the silky custard.

4. Seasonings. Salt and black pepper (and optional bouillon powder) enhance the flavor.

5. Vegetables. You can add any vegetables you like, but most should be sautéed first to avoid releasing excess moisture and making the quiche soggy. Green onions and leeks are exceptions and can be added raw or lightly chopped.

Tip: Sauté onions, bell peppers, spinach, mushrooms, or zucchini before adding them to the quiche so they don’t release moisture and make the filling soggy.

For this recipe I kept things simple with chopped green onions, which don’t require pre-cooking.

6. Breakfast meats. Sausage or bacon adds savory depth and texture.

7. Cheese. Cheese brings creaminess and flavor—cheddar works wonderfully, though Swiss, Colby Jack, or pepper jack are great alternatives.

How To Make Quiche

Follow these straightforward steps for a beginner-friendly quiche that doesn’t require blind baking:

  • Combine flour, cold butter, baking powder, salt, and buttermilk to make the pie dough. Chill the dough for 30 minutes so the butter firms up and creates a flaky crust.
  • Whisk eggs with milk or cream, salt, and pepper to form the custard.
  • Roll out the chilled dough and fit it into a 9-inch pie pan, trimming the excess and pressing it into shape.
  • Layer the chopped sausage, most of the shredded cheese, and green onions in the crust.
  • Pour the egg mixture over the fillings and sprinkle the remaining cheese on top.
  • Bake at 375°F (190°C) for 35–40 minutes, until the center is set and the crust is golden.

1. No blind-baking required—skip pie weights or prebaking and the quiche still bakes up beautifully.

Easy Quiche Recipe

This easy quiche recipe is made from scratch and perfect for breakfast, lunch, or dinner.

Ingredients

Pie Dough

  • 1 cup unsalted butter, cold
  • 2 cups all-purpose flour (250 grams)
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup buttermilk, cold (see Notes)

Quiche Filling

  • 4 green onions, chopped (or substitute with leeks)
  • 3 oz chicken sausage, diced (about 1 link)
  • 1 cup shredded cheddar cheese, divided
  • 6 eggs, at room temperature
  • ¾ cup whole milk (use cream for more richness)
  • ¼–½ teaspoon salt, or to taste
  • ¼ teaspoon chicken bouillon powder (optional)
  • ¼ teaspoon ground black pepper

Instructions

  • Make dough. Shred cold butter into a large bowl, add flour, baking powder, and salt. Combine with fingertips, then stir in cold buttermilk until a dough forms. Do not overwork. Divide into two portions, shape into rounds, wrap, and chill for 30 minutes.
  • Prepare filling. Whisk eggs with milk or cream, salt, pepper, and optional bouillon powder in a large bowl.
  • Preheat oven. Heat oven to 375°F (190°C).
  • Roll out dough. On a well-floured surface, roll one dough portion into a circle about 13 inches across.
  • Place dough into pie pan. Fit the dough into a 9-inch pie pan, trim the excess, and press it to form the shell.
  • Assemble quiche. Spread diced sausage, 3/4 cup of the cheese, and green onions in the crust. Pour in the egg mixture and sprinkle the remaining cheese on top.
  • Bake. Bake in the preheated oven for 35–40 minutes until the center is set and the crust is golden.
  • Serve. Let the quiche cool for about 5 minutes before slicing and serving.

Notes

Buttermilk: To make ½ cup buttermilk, add 1½ teaspoons vinegar or lemon juice to a ½ cup measuring cup, then fill to the line with milk. Let sit 5 minutes until slightly thickened—the tang won’t be noticeable in the finished recipe.

Dough: This recipe uses half of the prepared dough. Freeze or refrigerate the remaining half to make another quiche later.
