Here’s What’s Happening: 7-Day Weekly Highlights

Good morning, neighbours! Shouldn’t the world be celebrating the simple joy of fried ripe plantains—dodo? I once read a playful line that the greatest moment in history was when a slice of ripe plantain first hit hot oil. Can you blame anyone for agreeing? Anyway, I wanted to share what the past week looked like for me because I recently discovered the habit of writing a “done list.” It’s surprisingly motivating. Here’s how my week went:

Monday: I wrote and published three blog posts and felt utterly exhausted. No exaggeration. Every Monday I publish this “Here’s What’s Up” post, and I also aim to release a new recipe. I put up my delicious yogurt cake recipe. My first recipe of the week will actually appear on Tuesday because my energy ran out. Also, since last Monday was World Diabetes Day, I wrote a list post to connect with that observance.

Tuesday: Took the girls to the Mall of America for another field trip. I also wrapped up a four-week series geared toward single women.

Wednesday: Spent the day cooking, baking, and photographing food for the blog. I baked an apple pie for the first time—what a victory!

Thursday: Published a new video and shared it across my social channels. Thank you to everyone who sent love and feedback.

Friday: My roast chicken recipe made its appearance. If you’re planning a meal that needs a flavorful, show-stopping bird for the season ahead, that recipe might be just what you need.

Saturday: Spent most of the day at home moving from room to room and wondering what I’d actually accomplished—aside from rocking my crying toddler to sleep. But this is a done list, so here’s a win: I drove 30 minutes to rescue Mr N after he got accidentally locked out of his car. That little rescue injected a welcome rush of adrenaline into an otherwise meh day.

Sunday: At church, we focused on the power of persistence in prayer, illustrated by Moses keeping his hands raised during the battle with the Amalekites. Each time Moses held his hands up, the Israelites gained the upper hand; when he lowered them, the battle turned. It was a powerful reminder that endurance in prayer matters—keeping our hands up even when answers aren’t immediate. It also highlighted the importance of praying with others and nurturing relationships that support our spiritual life. I left feeling encouraged.

After church I attended a baby shower and did a quick grocery run before coming home to rest.

That’s a snapshot of the last seven days. Looking ahead, this week I’ll continue my regular blogging, homeschooling, cooking, and eating. I’ll also visit two new moms and film for YouTube. Speaking of YouTube, I plan to publish a cooking video on Saturday. I’ll share a trailer on my Facebook page during the week, with the full video on my YouTube channel come Saturday—so stay tuned.
